Vegan Pumpkin Pie 

Vegan Pumpkin Pie 

Serving size 6-8

 

Ingredients: 

  • 15oz Pumpkin Puree 

  • 3/4 cup Coconut Milk 

  • 1/4 cup Cornstarch

  • 1/4 cup Maple Syrup

  • 1 tsp Vanilla Extract

  • 3 tsp Pumpkin Pie Spice

  • 1/2 tsp Sea Salt

  • 1 Vegan Pie Crust 

Method: 

1.     Preheat the oven to 350°F.

2.     Add all the filling ingredients to a blender and blend until perfectly smooth.

3.     Pour out over your pie crust and smooth with a spoon.

4.     Bake in the oven for 50 minutes. 

5.     Remove your pie from the oven.  It may be wobbly in the center which is fine because it will firm up when completely cool.

6.     Allow to cool for about 4 hours and then place into the refrigerator to set completely overnight.

7.     Serve and enjoy.
