Banana Pancakes

Banana Pancakes

Serving Size 6-7 pancakes 

 

Ingredients:

2 cups of rolled oats

2 ripened bananas, peeled 

2 cups of coconut milk 

½ teaspoon of ground cinnamon 

½ teaspoon of vanilla extract 

1 tablespoon of ground flaxseed meal 

1 tablespoon of coconut oil 

 

Method:

1.     In a blender, combine the rolled oats, bananas, coconut milk, cinnamon, vanilla extract, and ground flaxseed meal. Blend until smooth. If the batter is too thin, add more oats or ground flaxseed meal to thicken the pancake batter. 

2.     In a medium skillet, grease skillet with coconut oil and heat for about 1 minute. 

3.     Pour a ladle of pancake batter, flip over when edges are golden brown (about 2 ½ minutes). Cook other side for another 2 ½ minutes. 

4.     Serve warm with fruit or maple syrup.
