Mushroom Pho Soup
Serving size 4-6
Ingredients:
8 ounces of mushrooms
64 ounces of chicken stock
1 ¼ tablespoon of coconut aminos
3 garlic cloves, minced
1 cinnamon stick
6 cloves
2 star anise seeds
1 stalk of a green onion, chopped
Handful of basil leaves
2 cups of Rice noodles
Method:
1. In a large saucepan, over medium heat, add the mushrooms, cinnamon stick, cloves, star anise seed, garlic and 32 ounces of chicken stock. Simmer for least 30 minutes until it is boiling. Mix occasionally.
2. Now add the rice noodles and the other 32 ounces of chicken stock and coconut aminos and allow to cook until tender for about 20 minutes. Mix occasionally.
3. Once the rice noodles are tender, add the basil and green onions. Simmer for about a minute.
4. Serve and enjoy.
