Hawaiian Pineapple Chicken 

Serving size 4

 

Ingredients: 

3-4 thinly sliced chicken breasts  

1 tablespoon of pineapple juice

2 tablespoons of coconut aminos

1 tablespoon of maple syrup 

1 garlic clove, minced

½ inch of fresh ginger, grated

5-6 slices of pineapple 

1 tablespoon of extra virgin olive oil  

 

 

Method: 

1.     In a large bowl, combine the pineapple juice, coconut aminos, maple syrup, freshly grated ginger and garlic. Mix marinade well. 

2.     Make sure the marinade coats all of the chicken breasts. Cover bowl and allow to marinate for at least 1 hour in the fridge.  

3.     In a large skillet on medium heat, add the Extra Virgin Olive Oil. Allow to heat up for about 1 minute. 

4.     Add the chicken with the marinade and cook the chicken for about 10 minutes on each side or until the chicken is thoroughly cooked. Make sure you brown the chicken on both sides. 

5.     Add pineapple right before you take out the cooked chicken and brown for about a minute. 

6.     Serve and enjoy.
