Healthy Chicken with Broccoli with Brown Rice

Serving size 4

 

Ingredients: 

2 thinly sliced and cubed chicken breasts

½ cup of coconut aminos

2 garlic cloves, minced

½ inch of fresh ginger, grated

½ onion, chopped 

12 ounces of frozen broccoli (cooked)

1 tablespoon of extra virgin olive oil  

 

Method: 

1.     For prep: Slice and cube the chicken breasts and set aside. Chop the onions and set aside. 

2.     In a large bowl, add the sliced and cubed chicken breast. Combine the garlic cloves, fresh ginger, and coconut aminos. Mix marinade well. 

3.     Make sure the marinade coats all of the chicken breasts. Cover bowl and allow to marinate for at least 1 hour in the fridge.  

4.     In a large skillet on medium heat, add the Extra Virgin Olive Oil. Allow to heat up for about 1 minute. 

5.     Add the chicken with the marinade and cook the chicken for about 10 minutes on each side or until the chicken is thoroughly cooked. Make sure you brown the chicken on both sides. 

6.     Add onions and broccoli. Cover and cook for about 5-10 minutes.
