Roasted Carrots and Zucchini
Serving size 4
Ingredients:
1 cup of carrots, peeled and sliced
2 zucchinis, peeled and sliced
1 teaspoon of sea salt
1 tablespoon of extra virgin olive oil
Method:
1. Preheat oven to 350 degrees Fahrenheit. Line sheet pan with parchment paper.
2. Peel and slice your carrots and zucchini then transfer to sheet pan with parchment paper.
3. Add the carrots and zucchini. Sprinkle sea salt and drizzle the Extra Virgin Olive Oil over the carrots and zucchini. Mix until evenly coated.
4. Roast carrots and zucchini in oven for about 40 minutes. Flip the carrots and zucchini 20 minutes into roasting.
5. Take out when thoroughly cooked.
6. Serve and enjoy.
