Bok Choy with Portobello Mushrooms

Bok Choy with Portobello Mushrooms Serving size 4

Ingredients: 

2 portobello mushrooms 

4 baby bok choy stalks

¼ cup of coconut aminos 

2 garlic cloves, grated

1 tablespoon of extra virgin olive oil 

 

Method: 

1.     Slice portobello mushrooms into steak slices and set aside. Cut each bok choy, halved lengthwise and set aside. 

2.     In a large skillet on medium heat, add the Extra Virgin Olive Oil. Allow to heat up for about 1 minute. Add the garlic until fragrant. Be careful not to burn the garlic. 

3.     Add the portobello steaks to the skillet. Add the coconut aminos.

4.     Using tongs, toss the portobello steaks around and allow to cook through for about 3 minutes. Cover and cook for another 2 minutes. 

5.     Uncover and add the baby bok choy. Cover again. 

6.     Continue to cook for about 5-10 minutes or until the bok choy and portobellos steaks are cooked. Portobello steaks will shrink in size. 

7.     Serve and enjoy.
