Rhubarb (Rheum rhabarbarum) is a perennial plant native that has been used in Traditional Chinese medicine for over thousands of years. The rhizome and root are used to treat gastrointestinal and liver diseases. Rhubarb consists of red stalks similar to celery and flowers that are edible. The long green leaves are not edible and are considered poisonous. Rhubarb is commonly used as fruit in culinary dessert dishes even though it is considered a vegetable.
Rhubarb is rich in powerful antioxidants, including anthocyanin which is responsible for its red color. Antioxidants help fight free radicals in the body and may help reduce the risk of chronic diseases.

Rhubarb is high in oxalates and therefor you should avoid consuming too much of it. If you are prone to kidney stones or have liver problems it’s best to avoid altogether.
Rhubarb may interact with certain medications such as diuretics and blood thinning medications just to name a few.
