Gluten Free Tortillas 

Serving Size 6 tortillas

Ingredients:

1 cup of chickpea flour

1 cup of tapioca flour

1 tablespoon of ground flaxseed meal 

¼ teaspoon of sea salt  

1 cup of coconut milk 

1 tablespoon of Extra Virgin Olive Oil 

 

Method:

1.     In a large bowl, combine chickpea flour, tapioca flour, ground flaxseed meal, sea salt and the coconut milk. Whisk until smooth.

2.     In a medium cast-iron skillet on medium heat, add Extra Virgin Olive Oil and heat for about 1 minute. 

3.     Pour ¼ cup of tortilla batter and cook for about 1-2 minutes or when the edges are golden brown and flip over. Cook other side for another 1-2 ½ minutes. 

4.     Serve warm. Add your favorite protein and vegetables.
