Fried Plantains (Tostones)

Ingredients: 

1 plantain 

½ of a lemon

¼ sea salt 

2 tablespoons of avocado oil 

Majador (cup) 

 

Method: 

1.     Peel and slice the plantain diagonally. 

2.     In a large skillet on medium-high heat, add the avocado oil. Allow to heat up for about 1 minute. 

3.     Add the plantain. 

4.     Allow it to cook about 5-10 minutes on each side or until golden brown and thoroughly cooked. 

5.     Take each plantain and mash it using a majador or the bottom of a cup is fine. Place the mashed plantains back onto the skillet to finish cooking. 

6.     Place the cooked plantains on a paper towel lined plate to drain the excess oil. 

7.     Sprinkle a little bit of sea salt. 

8.     Squeeze the lemon juice from the lemon. 

9.     Serve and enjoy.
