Celery root (celeriac) is a root vegetable related to celery, parsley, and parsnips widely cultivated in the Mediterranean Basin and Northern Europe. The celery root is round, and pale similar to a potato and turnip. It is not the root of a celery stalk. Celery root is commonly used in salads, soups, stews and casseroles.

In Traditional Chinese Medicine, celery root is used to lower blood pressure. In Ayurvedic medicine celery root is used as a diuretic to promote kidney function.

Celery root contains essential vitamins and minerals including vitamin C, vitamin B6, vitamin K, phosphorus, potassium and manganese.
