Kale with Mushrooms and Garlic
Kale with mushrooms and garlic
Serving Size 2-4
Ingredients:
2 cups of kale leaves, thoroughly rinsed and dried
1 garlic clove, grated
1 teaspoon of sea salt
1 cup of mushrooms
¼ cup of a small onion, diced
1 tablespoon of extra virgin olive oil
Method:
1. Heat the olive oil in a large skillet over high heat. Add the onions and allow to sauté for about a minute then add the mushrooms. Allow both to cook for about 2 minutes and then add the garlic. Sauté stirring frequently for about 5 minutes.
2. Now add the kale. Cook using a wooden spoon or tongs to turn it constantly until it wilts and reduces greatly in volume but is still bright green for about 10-15minutes.
3. Sprinkle sea salt.
4. Serve immediately.
