Chickpea Crust Pizza
Serving Size 2-4
Ingredients
For the crust:
1 cup of chickpea flour
1 cup of water
1 tablespoon of olive oil (Extra virgin olive oil)
¼ of teaspoon sea salt
1 teaspoon of oregano
1 garlic clove, minced
For the pizza toppings:
2 tablespoons of basil dressing (see recipe)
¼ cup of sliced mushrooms
1 tablespoon of shallots, sliced (onions can also be used)
1 handful of kale (spinach or arugula can also be used)
Method
1. Preheat the oven to 350 degrees Fahrenheit. Line your baking sheet with parchment and sprinkle extra virgin olive oil.
2. In a bowl, mix the all of the ingredients for the crust (chickpea flour, water, olive oil, sea salt, oregano and minced garlic clove).
3. Mix well until you have a smooth consistency.
4. Place the parchment paper onto the pizza pan. Spread a little bit of olive oil on the parchment paper to prevent sticking.
5. Spread dough onto parchment paper and bake for about 20 minutes or until edges are lightly golden.
6. Remove the crust from the oven. Add the toppings for the pizza (basil dressing, mushrooms, shallots, and kale). Place pizza back into oven and continue baking for another 10 minutes.
7. Remove pizza and enjoy.
