Zucchini Patties 

Serving Size 6-8 

 

Ingredients: 

4 zucchinis (6 cups), grated  

1 garlic clove, grated

1 teaspoon of sea salt 

½ of a small onion, diced

1 cup of chickpea (garbanzo) flour

2 flax eggs (2 tablespoons of ground flaxseeds and 6 tablespoons of warm water)

1 teaspoon of dried oregano

 

Method: 

1.     Preheat your oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper. 

2.     In a small bowl, add 2 tablespoons of ground flaxseeds and 6 tablespoons of water to create your flax eggs and set aside. 

3.     In a large bowl, line your bowl with a cheesecloth and grate your zucchinis in the bowl.  Once all of your zucchinis are grated, gather the ends of your cheesecloth and squeeze the water from the zucchini. Squeeze as much water out as possible. 

4.     Now transfer your squeezed zucchini in a new large bowl. Add the onions, sea salt, chickpea flour, garlic, oregano and flax eggs. Mix well.  Scoop up enough of the mixture to create patties and place them onto the parchment paper. 

5.     Bake the zucchini patties for 1 hour, flipping them over after 30 minutes. They should be golden brown on both sides and thoroughly cooked. 

6.     Serve immediately.
