Mashed Yuca (Cassava)

Mashed Yuca (Cassava)

Serving size 4

Ingredients: 

3 cups of water

1lb of frozen yuca

¼ cup of red onions, thinly sliced

¼ teaspoon of sea salt 

1 teaspoon of apple cider vinegar

1 tablespoon of extra virgin olive oil  

  

Method: 

1.     In a large saucepan, add water, sea salt and frozen yuca. Make sure you add enough water to cover the yuca if the 3 cups are not enough. 

2.     Boil and simmer for about 20-30 minutes or until tender. 

3.     While the yuca is boiling, in a separate bowl, add the thinly sliced red onions, apple cider vinegar and sprinkle a little bit of sea salt. Mix well and set aside. 

4.     Once the yuca is done, transfer the yuca into a bowl (without the starchy water- don’t discard the starchy water) and use a masher to mash the yuca into a smooth consistency. Add some of the left-over starchy water to help mash the yuca and keep it moist. 

5.     In a small skillet, add the extra virgin olive oil and heat up for about a minute. Add the red onions and cook until translucent.

6.     Add the cooked red onions on top of your mashed yuca. 

7.     Serve and enjoy.
