Potatoes have essential vitamins and minerals including vitamin C, potassium, manganese, magnesium, phosphorus, iron, copper, vitamin K, zinc and B vitamins. Potatoes also have a high water content.
Potatoes are rich in antioxidants including flavonoids, carotenoids, and phenolic acids. Antioxidants help fight free radicals in the body and may help reduce the risk of chronic diseases.
